Scrambled eggs with goat cheese and chives

Saturday morning or any morning, scrambled eggs are delicious especially with the tangy addition of goat cheese.


Ingredients

4 eggs

1/4 cup half and half cream

1 tablespoon butter

2 tablespoons soft goat cheese

Coarse salt and freshly ground pepper, to taste

4 chives, chopped


Preparation

In medium bowl, whisk eggs and cream.

Heat butter in nonstick pan over medium heat. Pour in egg mixture and scramble for 30 seconds. Add goat cheese, crumbling to distribute, stirring lightly again for 30 seconds. Transfer to serving dish; eggs will continue to cook once removed from pan. Season with salt and pepper and top with chives.
