Romaine, Bacon, Chèvre, and Rosti Salad
I found this wonderful salad at one of my family’s favourite French Bistro’s this past week, and took this picture with my phone. And of course, I couldn’t help but try my best to recreate this wonderful combination of crispy and savoury salad that’s so easy to make, and so delicious, as long as you use the best ingredients.
Ingredients
6 large romaine leaves, freshly washed and dried
4 slices of double-smoked thick-cut bacon, fried and cooled
2 tablespoons Chèvre (soft goat cheese)
Rosti (crispy potato pancake) recipe here or you can use store-bought
Balsamic vinaigrette
1/4 cup extra-virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon honey
Sea salt and freshly cracked pepper
Preparation
For vinaigrette, combine all ingredients in small jar with lid. Shake to combine.
Make the potato pancakes nice and crispy, if you can find a good store-bought that’s great, or use the recipe I provided above, basically, you want crunchy potato of some kind. (I can’t believe I’m writing this, but tater tots would work too). 😀
Wash and dry romaine leaves and arrange them on a serving plate. Drizzle with sweet balsamic dressing and layer with bacon slices, a tablespoon-sized scoop of soft chèvre, and the crispy potato pancakes. Serves 2. Enjoy!
