Milk chocolate-Dipped Rice Krispies squares with Sea Salt
I should have called this bar, “The OMG I Need This” because that’s what you’ll say after you’ve had it once. You must use good milk chocolate not dark chocolate, and sea salt flakes not fine. The humble rice krispie square gets a redo with good vanilla and sea salt, then dipped in melted chocolate and sprinkled with sea salt. This is the perfect treat for homemade gifts or good enough to serve at any fancy dinner. Imagine serving this simple bar with flakey sea salt on good china—you could lay a sprig of rosemary on top–and watch the expressions and conversation flow. The image above shows toasted almonds in the chocolate, but here I’ve left them out.
Ingredients
3 tablespoons salted butter
4 cups miniature marshmallows
6 cups Rice Krispies cereal
¼ teaspoon good vanilla (I like using Mexican vanilla)
Pinch fine sea salt
2 cups good quality milk chocolate chips
Maldon sea salt to sprinkle
For squares, in large stockpot melt butter over low heat. Add marshmallows and stir until completely melted, add vanilla and pinch salt and mix well. Remove from heat. Add Rice Krispies cereal. Stir until well coated.
Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 3 x 4-inch rectangles. Place in fridge to chill for 30 minutes.
To melt chocolate, place over double boiler and just melt. Remove squares from fridge and dip ¾ up of long side into chocolate and sprinkle chocolate with Maldon sea salt. Makes 8 - 10.
