Goat cheese popovers with parsley


A simple, easy to make recipe with the pungent flavour of goat cheese, perfect to make ahead, freeze, and warm for any meal.


Ingredients

1 cup all-purpose flour

1⁄2 teaspoon salt

1⁄8 teaspoon freshly ground pepper

2 tablespoons finely chopped fresh flat leaf parsley 1 1⁄4 cups milk

2 eggs, room temperature

1 tablespoon unsalted butter, melted

2 ounces goat cheese, crumbled


Preheat oven to 450°F. Generously grease 12-cup muffin tin; set aside.

In large bowl, whisk together flour, salt, pepper and parsley. In another bowl, whisk together milk, eggs, and melted butter. Pour wet ingredients over dry and whisk together until just combined. Pour batter into prepared muffin tin. Place cheese in centres. Bake for 10 minutes. Do not open oven door. Reduce heat to 350°F; bake until brown and crusty and fully puffed, 8 to 10 minutes. Remove from oven. Lift popovers from tin immediately to avoid sticking.
