Aged cheddar loaf

Ingredients

2 1⁄2 cups all-purpose flour

2 tablespoons sugar

1 1⁄2 tablespoons baking powder

1⁄2 teaspoon baking soda

1⁄2 teaspoon coarse salt

1 (12-ounce) can beer (1 1⁄2 cups)

1 1⁄2 cups shredded aged cheddar cheese


Preheat oven to 375°F. Grease 8-inch square metal cake pan; set aside.

In large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add beer and cheese. Stir just until combined (batter should be lumpy).

Spoon batter into prepared pan. Bake for 35 to 40 minutes or until top is lightly golden. Remove from oven and let cool before slicing.
