Tomato, Basil and Bocconcini Cheese

3 Roma tomatoes, sliced

12 fresh basil leaves

3-4 bocconcini balls, sliced

1⁄4 cup extra-virgin olive oil

Good splash balsamic vinegar

Pinch of coarse salt and cracked black pepper


Arrange tomato, basil and cheese on serving plates. Drizzle with combination of oil and vinegar, sprinkle with salt and pepper and serve. Serves 6.
