Summer Radishes With Cold Butter And Sea Salt

On a recent trip to New York, my daughter and I had dinner at the French restaurant, Le Dive in the lower east side. It was a bit hipster and loud. Think young person’s night club with loud music and tiny stools. You know the kind you’re trying to balance on, and look cool a the same time. Haha!

My daughter loved it, and I did all I could to blend in. But then we opened the menu and at the very top was: Radishes and butter with warm baguette. We ordered it straight away.

It arrived moments later without a drop of disappointment. I mean… fresh radishes drizzled with extra-virgin olive oil, sprinkled with sea salt, and served with cold butter and fresh sourdough…Hello—It was marvellous!

We washed it down with a good bottle of French wine and I was transported right to my childhood and into my Mother’s garden! Well, except for the wine and my mom’s homemade bread. Go, go, go… buy yourself the best radishes you can find, and enjoy this little luxury.


Ingredients

Assortment of fresh radishes, washed and dried (1 bunch = about 30 radishes)

Salted butter, chilled

Fleur de sel sea salt

Baguette or good sour dough


Preparation

Wash and gently dry the radishes. Snip the leaves off, or leave them on if they are very fresh. Using a mandolin, slice half of the radishes into thin rounds and quarter the rest. Place in a serving dish, and drizzle with extra-virgin olive oil and sprinkle with sea salt. Serve with chilled butter and a baguette or good sour dough bread.

Note: It’s always nice to garnish the plate with your favourite fresh herbs or micro greens.
