Roasted Green Beans & Vegetables
Ingredients
1 pound green beans, ends cut
1 red onion, chopped
1 red pepper, chopped
1 yellow pepper, chopped
2 tablespoons extra-virgin olive oil
Coarse salt and cracked black pepper
Preheat oven to 425°F.
In large bowl, toss beans, onion and peppers with olive oil and sprinkle generously with salt and pepper. Place on parchment-lined baking sheet and roast 10 minutes. Remove from oven and turn onto serving platter. Serves 4.
