Prosciutto wrapped melon salad

A delicious and easy recipe to make as a quick appetizer or lunch.


Ingredients

1 melon, pealed, cut into lengths

8 slices prosciutto, halved

3 cups arugula

1/2 cup balsamic vinegar

1/4 cup brown sugar

Cracked black pepper


Preparation

Place small amount of arugula onto each serving plate. Wrap prosciutto around pieces of melon and place on top. Reduce balsamic vinegar and brown sugar over medium heat until slightly thickened. Remove from heat and spoon over salad, sprinkle with pepper and serve.
