Ingredients
12 ounces good quality white rum
3 cups club soda
Simple syrup (see recipe below)
4 limes, sliced
3 bunches fresh mint
Crushed ice
Simple Syrup
1 cup water
1 cup sugar
To make simple syrup, in a small saucepan, combine water and sugar over medium heat. Bring to boil and lower to simmer, about 2 minutes. Remove from heat and let syrup cool to room temperature.
In pitcher, combine rum, club soda and simple syrup. Add limes and mint and let stand for
1 hour. Pour into ice filled glasses and garnish with mint and lime. Serves 10 to 12.
