Mari’s Easy salsa
Ingredients
1 large onion
1 tablespoon vegetable oil
4 serrano peppers, seeded, finely chopped
1 cup cilantro, chopped
16 roma tomatoes
1 1⁄2 teaspoons coarse salt
Preheat oven to 350°. heat oil in heavy skillet over medium heat and sauté onions until slightly translucent. add tomatoes and peppers and bring to a boil then immediately remove from heat; stir in cilantro. spoon salsa into sterilized jars to just below neck and screw lids on lightly. use preferred canning method to can.
Makes 2 jars.
