Classic Caesar salad with homemade croutons

The classic Caesar salad is light and delicious with any meal. Toss the dressing well to coat every piece of romaine, and after adding Parmesan toss again to ensure you get the full experience in every bite.


Ingredients

2 heads romaine lettuce, chopped

1 cup Parmesan, finely grated

2 cups homemade croutons

Caesar Dressing

2 cloves garlic, minced

4 anchovy fillets, minced

2 tablespoons lemon juice

1 teaspoon Worcestershire sauce

1/2 teaspoon Dijon mustard

1 tablespoon mayonnaise

1/3 cup extra-­virgin olive oil

Coarse salt and cracked black pepper, to taste


Preparation

For croutons, preheat oven to 350˚F. In large bowl, toss cubed stale bread with olive oil, garlic, salt and pepper. Spread on baking sheet and bake for 10-15 minutes, turning occasionally until crisp. Set aside to cool.

For dressing, in medium bowl, combine all ingredients and whisk well to combine.

In large bowl, place romaine and toss with dressing. Add Parmesan and croutons and toss again. Turn onto serving platter and top with more Parmesan. Serves 4.
