Butter lettuce and cucumber salad with buttermilk dill dressing

A simple, fresh, crisp salad, with a tangy dressing.


Ingredients

1 head butter lettuce, washed

1⁄2 English cucumber, sliced

Buttermilk dill dressing

1⁄4 cup mayonnaise

1⁄2 cup sour cream

1⁄2 cup buttermilk

2 tablespoons cider vinegar

1 tablespoon finely chopped parsley

1⁄4 cup chopped fresh dill

2 teaspoons Dijon mustard

2 teaspoons sugar

1⁄2 teaspoon salt

1⁄8 teaspoon freshly ground pepper


For dressing, in medium bowl, combine all ingredients until well blended. Cover and chill 30 minutes prior to using. Can be stored in refrigerator up to 3 days.

To assemble salad, divide lettuce and cucumbers among 4 plates. Drizzle dressing over salad. Serves 4.
