Sweet Potato Quinoa Chili


A hearty and flavourful chili made with sweet potatoes, black beans, quinoa, and a blend of spices.


Ingredients

- 1 tablespoon olive oil

- 1 large onion, chopped

- 4 cloves garlic, minced

- 2 tablespoons chili powder

- 1 teaspoon ground cumin

- 1 teaspoon smoked paprika

- 1/2 teaspoon dried oregano

- 1/2 teaspoon salt

- 2 cups vegetable broth

- 1 can (14.5 oz) diced tomatoes

- 1 can (15 oz) black beans, rinsed and drained

- 1 large sweet potato, peeled and diced into small cubes

- 1/2 cup quinoa, rinsed

- 1/4-1/2 teaspoon cayenne pepper (optional)

- 1 tablespoon honey (optional)

- Toppings: chopped cilantro, chopped green onions, shredded cheese, sour cream or Greek yogurt


1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the chopped onion and cook until softened about 5 minutes.

2. Add minced garlic, chili powder, cumin, smoked paprika, oregano and salt. Stir to combine and cook for an additional 30 seconds.

3. Pour in the vegetable broth, diced tomatoes, black beans, sweet potato, quinoa and cayenne pepper (if using). Bring the mixture to a boil, then reduce heat and let it simmer for about 20-30 minutes or until the sweet potato is tender and the quinoa is cooked.

4. If desired, add honey to round out the flavor.

5. Ladle the chili into bowls and serve with your preferred toppings.
