Coleslaw with chili maple Dressing

Ingredients

3 cups shredded green cabbage

1 large red bell pepper, thinly sliced

2 green onions, sliced

Sea salt and freshly ground pepper, to taste

Chili Maple Dressing

½ cup mayonnaise

1 clove garlic, finely chopped

1 tablespoon minced shallot

2 tablespoons canned green chilies, finely chopped

1 tablespoon cilantro, finely chopped

1 tablespoon pure maple syrup

1 tablespoon Dijon mustard

1 tablespoon malt vinegar

2 tablespoons fresh lime juice

½ teaspoon ground coriander


Preparation

For dressing, whisk all ingredients in medium bowl. Set aside.

In large bowl, toss cabbage, peppers and green onions. Pour dressing over and toss well. Season with salt and pepper. Cover and chill 1 hour before serving. Serves 4.
