Roasted Chicken Breast With Cajun Rub

Ingredients

4 chicken breasts, bone-in, skin on

Cajun rub

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper

1⁄2 teaspoon mustard powder

3⁄4 teaspoon ground white pepper

3⁄4 teaspoon ground black pepper

1⁄2 teaspoon thyme, dried

1⁄2 teaspoon oregano, dried

1 tablespoon sweet paprika

1 tablespoon coarse salt


Preparation

For rub, mix together all ingredients in a small bowl and set aside.

Preheat oven to 450°F. Rinse chicken and pat dry with paper towel. Liberally spread rub under skin and all over breasts. Place onto parchment-lined baking sheet and bake uncovered for 20 minutes. Reduce oven temp to 350°F and bake for another 30 - 40 minutes or until cooked through. Chicken is cooked when meat thermometer inserted in thickest part of breast reaches 165°F. Rest chicken for 20 minutes before serving. Serves 4.
