Pico de Gallo

Simple, Fresh, and flavourful, this easy Mexican condiment called pico de gallo and is simply a mixture of freshly-chopped ingredients. Traditional salsa, on the other hand, almost always involves a food processor to transform the ingredients into a smoother, pureed form.


Ingredients

4 Roma tomatoes, seeds removed, finely diced

1 small white onion, finely diced

1 jalapeño pepper, minced

3 tablespoons cilantro, finely chopped

Juice of 1 lime

Sea salt, to season


Preparation

In small bowl place all ingredients, stir to combine. Makes 2 cups. Can be stored in fridge for up to 3 days.
