Mari’s Holy Grail Pizza Sauce

Here is the secret to the best pizza sauce around, and so easy you won’t believe it. No matter what you’ve heard, how many sauces you’ve tried, please believe me this is the winner. The baking soda removes the bitterness and adds a touch of sweetness. No sugar or any herbs should be added. Your flavours will come from the ingredients you top the pizza with.


Ingredients

1 can (750 ml) whole San Marzano tomatoes, seeds removed

Sea salt to taste

Pinch baking soda

Preparation

Very important for seeds to be removed from tomatoes. Slice canned tomatoes lengthwise. Discard inner juices and seeds with a teaspoon. You can also run through a food mill to remove seeds.

Transfer tomatoes to blender, and pulse until you have a smooth tomato puree. Add a pinch of baking soda and mix.

If the sauce is still too acidic, just add another pinch of baking soda. Then season with a generous pinch of fine sea salt and your sauce is ready.
