Green beans with crispy onions
These beans are a favourite in my family. I’ve recently updated the method to include a sear on the bean, which I really love. The worcestershire adds the perfect acidity to the delicious bean. The crispy onions take this dish over the top. It’s the perfect side dish, and also lovely on its own.
Ingredients
1 large bunch green beans, trimmed
4 tablespoons all-purpose flour
2 tablespoons sugar
2 teaspoons salt
1 large yellow onion, sliced paper-thin
1 tablespoon butter, melted
2 teaspoons Worcestershire sauce
Sea salt and cracked black pepper
Vegetable oil for frying
For crispy onions, combine flour, sugar and salt in large bowl. Separate onion slices and toss in flour mixture to coat. Heat 1-inch neutral oil in wide-bottom saucepan to 375°F on thermometer. Shake excess flour from onion rings and fry in batches, stirring often, until crispy. Remove; drain on paper towels, and set aside.
Whisk melted butter with Worcestershire sauce and set aside.
For beans, place beans in a pot of salted water and bring to a boil for 2 minutes; drain and place beans on baking sheet and broil for 2-3 minutes, for a slight char. Place beans in mixing bowl and toss with butter mixture; salt and pepper to taste. Serve with fried onions. Serves 4.
