Easy Greek Chicken Souvlaki with Tzatziki Sauce


With a little hack on tzatziki, this recipe is so simple to make and so delicious!


Ingredients

2 (6 oz) boneless skinless chicken breasts, cut into 1x1-inch size pieces

8 wooden skewers soaked in water

2 cups dried couscous

2 cups water

Sea salt to taste

1 large tomato, chopped

1/2 red onion, chopped

1/2 English cucumber, chopped

Tzatziki sauce

1/2 cup cream cheese (whipped is easiest) or Greek yogurt

6 tablespoons milk

1 tablespoon lemon juice

1 green onion, finely chopped

1 clove garlic, minced

1/4 cup English cucumbers, finely chopped


Preparation

For couscous, bring water to boil in small saucepan. Remove from heat and stir in couscous. Cover and let stand 5 minutes or until liquid is absorbed. Fluff with fork and salt to taste.

For tzatziki, whisk cream cheese , milk, lemon juice, green onion, and garlic until well blended. Divide tzatziki in half, and stir cucumbers into one half to create tzatziki sauce, and place in fridge to chill for 20 minutes.

For chicken, pour reserved half tzatziki (without cucumbers) over chicken in medium bowl to marinate, and place in fridge for 20 minutes.

Heat barbecue to medium-high heat. Remove chicken from marinade; discard marinade. Thread chicken onto 8 skewers. Grill 8 to 10 min. or until done, turning occasionally.

Serve chicken over couscous with tzatziki sauce and chopped tomato, red onion, and cucumber.

Note: An alternative to barbecue, you can also place chicken under your oven broiler for approximately 8 minutes, just watch not to over cook.
