Classic bruschetta
Ingredients
2 pounds tomatoes, diced
1 clove garlic, minced
1⁄4 cup extra-virgin olive oil
1 tablespoon white wine vinegar
1 small bunch fresh basil, torn
Coarse salt and freshly ground pepper, to taste
Toasted multigrain baguette
In large bowl, combine tomatoes, garlic, olive oil, vinegar and basil. Season with salt and pepper. Let stand at room temperature for 15-30 minutes to allow flavours to combine. Serve on toasted baguette. Serves 6-8.
