Beets with cumin and lemon
Ingredients
2 large beets
Juice of 1 lemon
1 tablespoon extra-virgin olive oil
1⁄2 teaspoon cumin
1⁄2 teaspoon coarse salt
Preheat oven to 350 ̊F. Wrap whole beets in aluminum foil and roast for 30 - 40 minutes, or until easily pierced with knife. Cool, peel, cut into wedges and toss with remaining ingredients.
