Authentic French Canadian Tourtière
A traditional French-Canadian tourtiere everyone loves! Tested to perfection, and approved by our founder Mari Loewen’s French Canadian neighbour who makes this every Christmas and has an exceptional palate.
Ingredients
1 (15gr) tablespoon butter
3 cups (680 gr) ground pork
1 cup (150gr) finely chopped white onion (¼ x ¼-inch chop)
2 cloves (12 gr) minced garlic
½ teaspoon (1.3 gr) ground savory (or 2 teaspoons (4 gr) dried flakes)
1 ½ tablespoons (4 gr) dried thyme flakes
½ teaspoon (1.3 gr) ground allspice
1 teaspoon (6 gr) sea salt
½ teaspoon (1 gr) ground black pepper
¾ cup good-quality chicken broth
3 tablespoons (25 gr) all-purpose flour
Store-bought puff pastry, or pie dough (enough to cut into 2 (9-inch) rounds
Preparation
Melt butter in large saucepot over medium heat. Sauté onion and garlic 4 minutes. Add pork, herbs, spices, salt, pepper and chicken broth, breaking up lumps with wooden spoon, 4 minutes. Reduce to simmer covered for 10 minutes. Sprinkle flour and cook 4 minutes. Remove from heat and cool.
Preheat oven to 425°F. Fit first pastry into 9-inch pie plate, and top with 1 ½ cups cooled pork mixture. Lay second pastry on top (does not have to touch the edge). Cut slits into top of pastry and bake at 425°F for 20 minutes. Reduce heat to 375°F and bake another 10 minutes. Remove from oven and rest 10 minutes before serving. Serves 8.
Note from Mari: I like simply placing the top pastry on top of the pie rather than crimping the edge. I htnk it looks unique and lovely.
