Mari’s Ina Garten-Inspired 3-Ingredient Lemon Capellini

Inspired by Ina Garten’s capellini pasta–which she makes at midnight on New Year’s Eve in Paris–here I’m using spaghetti–it’s so simple using only 3 ingredients, and takes less than 10 minutes to make.

A delicious, lemony pasta…so incredible everyone should learn to make it for every day. You can add seared shrimp or chicken but let’s keep it simple and learn this basic, inexpensive, sophisticated dish, everyone will love!


Ingredients

1 package spaghetti (or capellini)

Zest and juice of 2 large lemons

1⁄4 pound salted butter

Sea salt and cracked black pepper


Preparation

In large pasta pot of generously salted water, cook spaghetti for about 4 minutes, you do not want to fully cook the pasta, it will finish in the final stage below.

Meanwhile, in large skillet melt butter, add lemon zest (reserve 1 tablespoon for finishing) and juice, swirl around, then add to spaghetti from the pasta pot with 1 cup pasta water. Turn up the heat and toss until spaghetti reaches el dente stage, and pasta is silky and creamy. Top with more lemon zest. Season with salt and pepper to serve. Serves 4.
