Golden potato cakes

Crispy, tasty and so simple. Dollop with sour cream or apple sauce to make this recipe extra delicious. From “Brilliance” issue 9.

Golden potato cakes

8 medium new potatoes
6 tablespoons butter
Coarse salt

Boil potatoes about 10 minutes, or until tender; drain, cool, peel, and shred. In a large skillet or griddle, over medium-high heat, melt 3 tablespoons butter and form potatoes into cakes, using approximately 1/2 cup potato per cake. Flatten each cake with spatula. Cook uncovered about 6 minutes, until a good bottom crust forms. Keep pressing cakes with spatula. Add another 3 tablespoons butter and flip cakes; season with salt and cook for another 6 minutes, or until crust forms. Remove from skillet and serve immediately.

Makes 4 servings.
