Chocolate chip cookies

These adorable cookies are made in molds to keep their shape. A perfect Valentines treat! From “beautiful” issue 10.

1⁄2 cup unsalted butter, room temperature
1⁄2 cup vegetable shortening
3⁄4 cup sugar
3⁄4 cup packed brown sugar
2 eggs
2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1⁄2 teaspoon salt
2 cups semi-sweet chocolate chips

In the bowl of an electric mixer, beat butter and shortening with sugars until smooth. Add eggs, one at a time, and beat until light and fluffy, about 5 minutes. Blend in vanilla. In a separate bowl, combine flour, baking soda, and salt; add to butter mixture until blended. Stir in chocolate chips. Refrigerate mixture 30 minutes.

Preheat oven to 350°F. Drop dough by heaping tablespoonsful into heart-shaped silicone molds; press down slightly. Bake for 8 minutes, or until golden. Let cool completely in molds. Remove cookies by inverting mold and gently pushing cookies out.

Makes 20 to 24 cookies.

As a frugal homemaker, she used only fresh local ingredients and took the time to make things special. Long before organic became fashionable, Mari was privileged to enjoy this way of life. Although named after her Mother, her father's entrepreneurial spirit that taught her anything is possible. Today, ANNA Magazine sells throughout North America.
